Blueberry Dump Pie Recipe

Hi everyone!

Everyday is insane around here lately and is about to get even more insane as more and more Farmers Markets start up. So, when it comes to cooking and baking each day, lets just say I can whip up a gourmet sandwich with the best of them!

I seem to have fewer and fewer days where I have time to cook or bake anything too elaborate. So, I have kind of built up a quick and easy recipe file in my mind. And dump cakes/pies are right up there for fast and easy!

Ingredients:

a package of frozen blueberries

a can of peaches

a yellow or white cake mix

Yup, three ingredients and that is it. Oh, you will need a pie pan. can opener and an oven. Preheat your oven to 375 degrees.

Dump the frozen blueberries into your pie pan. You can see from the picture above my blueberries were thawed. I had planned on making this the night before but, changed my mind. Normally I would just put the frozen fruit straight into the pie dish, I would break them up a bit.

Open the can of peaches and place on top of the blueberries.

Dump the cake mix on top and spread it around. At this point I realized I should have taken out some of the blueberries because my pie pan is starting to overflow. Oh well.

Now drizzle the peach juice from the can over the whole pie. Done. Into the oven (on a cookie sheet) it goes. Cook for about 30 minutes or until the cake mix becomes golden.

Here is just a little tip:

We all have those cookie sheets that look like they are ready to be thrown out. Use those ones for this kind of thing, a sort of drip tray. No one is going to see it because it won’t be part of serving. Unless of course, you are a blogger and just show the whole world your old worn out trays…like me

Now serve it up! You can top with whipped cream of vanilla ice cream. YUM!

You can make this with any kind of fruit you want. So, whatever you see on sale, stock up and you can whip out a wonderful homemade pie with little to no effort!
